This one goes out to all my PB & J lovers, I know you're out there. Replace blackberries with your favorite berry- strawberry, raspberries, blueberries etc.
Ingredients:
- 2 cups of fresh berries of your choice
- 2 tbsp maple syrup
- 2 tbsp chia seeds
- 1/2 tsp vanilla extract (or lemon juice if you prefer a sour jam over a sweet one! )
Start by setting the stove to medium heat and in a medium pot, begin to stir the blackberries. Continue to stir until they reach a boil. With a fork, mash the blackberries but leave some chunks for the perfect jam texture. Continue to stir and mix in the maple syrup and chia seeds. I cooked on low for about 8 more minutes until the consistency of the jam was thick. Take the pot off of the stove and mix in the vanilla extract. Let it cool to room temp before sticking it in the fridge- it can last up to two weeks. Voila! Perfect with toast, scones, crackers, etc :)

Mermelada Casera
Para los amantes del PB y J sandwich (sandwich de manteca de maní y mermelada) que andan por ahí, no se escondan sé que existen.
Ingredientes:
- 2 tzas de frutos rojos de eleccion
- 3 cdas de miel/agave/jarabe de arce
- 2 cdas de semillas de chía
- 1/2 cdta extracto de vainilla (o jugo de limon )
Colocar los frutos rojos en una olla al fuego a temperatura media y revolver. Cuando sueltan el hervor, con la ayuda de un tenedor deshacerlas pero que no quede un puré, pero que hayan pedacitos de las herras para alcanzar la textura ideal y parezca natural, hecha en casa. Agregar la miel y las semillas, bajá la temperatura y cocinalas a fuego lento unos 8-10 minutos más. Sacalas del fuego y agregar la vainilla. Dejar en reposo hasta llegar a la temperatura ambiente, después podés ponerla en la heladera y te dura hasta 2 semanas. Deliciosas para comer con tostadas o con scones con un rico té!
