CHEESY EGGPLANT PIZZA BITES

Ingredients:


- 1 large eggplant
- salt to taste
- avocado oil (can use olive oil as well)
- 3 cups vegan shredded cheese

For the sauce:
- 1 cup marinara sauce
- 1 tbsp garlic powder
- 1 tsp pepper
- 1 tsp salt
- 1/2 tsp red pepper flakes
- 1 cup fresh baby spinach


Preheat oven to 400. Slice the eggplant into little circles and brush a little olive oil on each side. Place on a baking sheet lined with parchment paper and sprinkle salt and pepper. Place in the oven for 7-10 minutes. Meanwhile, grab a skillet and sautee spinach and add the marinara, garlic powder, pepper, salt, and red pepper flakes. Remove the eggplant from the oven, top with marinara and spinach mix and sprinkle vegan cheese. Broil for 5 minutes and top with chili flakes! Voila! Low carb pizza for all.
