YASSSSSS. I have been craving chicken tenders in a long time and finally built the courage to make them at home. Luckily, I had access to an air fryer but you can also bake these! Enjoy :)
Ingredients:
- 1 to 1 1/2 lbs chicken breast
- 2 eggs
- 1 cup almond flour
- 2 tbsp ground flaxseed (optional)
- gluten-free panko breadcrumbs (optional)
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- avocado oil spray
First, cut the chicken breast into thin slices. Then, pat down the chicken with a paper towel. Set aside. In a bowl, mix all of the dry ingredients- almond flour, ground flaxseed (optional), Italian seasoning, salt, pepper, paprika, onion powder, garlic powder, and gluten-free panko bread crumbs (optional). In a different bowl, whisk the two eggs. Dip the chicken in the eggs and then into the dried mix. Make sure the chicken slices are completely covered in the dry mix. Spray with avocado oil and put in the air fryer for 5 min at 400 F. After 5 minutes, flip and fry once more. If you prefer to bake them, set the oven to 425 and bake for 40 minutes, flipping halfway. Voila! I devoured these with honey mustard but add any dipping sauce of your choice.
