So deliciously good, you have to try. Gluten and dairy-free :)
Ingredients:
- 1 1/2 cups almond flour
- 2 tbsp coconut flour
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1 tbsp poppy seeds (or sub chia seeds)
- 3 eggs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 3 lemons, juiced
- zest of 2 lemons
- 1/4 cup almond milk
For the drizzle:
- 1/4 cup coconut butter
- 1/2 tbsp coconut oil
Preheat oven to 350. In a large bowl, mix all of the wet ingredients- coco oil, lemon juice, maple syrup, eggs, and almond milk. Then, mix in dry ingredients- almond flour, coconut flour, baking soda, salt, poppy seed and lemon zest. Using a spoon, scoop into a lined muffin tin. Bake for 15-18 minutes. While baking, mix the melted coconut butter with coconut oil. Drizzle the muffins and voila!! So yummy and light. TIP: LEt the muffins sit and cool for a couple of hours before eating- the texture is much better :)

Muffins de limón y semillas de amapola....riquísimos...tenés que probarlos! Libres de gluten y de lácteos :)
Ingredientes:
1 1/2 tza de harina de almendras
2 cdas de harina de coco
1 cdta de bicarbonato de sodio
1/4 cdta de sal marina
1/2 cdta de semillas de amapola
(podés sustituir por semillas de chia)
3 huevos
1/4 tza de aceite de coco derretido
1/4 tza de jarabe de arce (syrup)
3 limones exprimidos
Ralladura de 2 limones (cáscara)
1/4 tza de leche de almendras
Para el baño
1/4 tza de manteca de coco
1/2 cda de aceite de coco
Calentá el horno a 350 F (175 C) y en un bowl grande mezclá todos los ingredientes húmedos- aceite de coco, jugo de limón, jarabe de arce, huevos, y leche de almendras. Agrégale los ingredientes secos previamente mezclados - harina de almendras, harina de coco, bicarbonato, sal, semillas de amapola y ralladura de limón. Con una cuchara colocá la mezcla en los moldes previamente forrados con las canastitas de aluminio o papel manteca. Mientras se cocinan (15-18 min)prepará el baño mezclando la manteca de coco con el aceite de coco. Una vez prontos rocialos con el baño de coco y listo! Deliciosos y súper livianos.
