RICE KRISPIE TREATS

I decided to take a walk down memory lane and make these homemade Rice Krispies treats for my family to enjoy as a quarantine pick me up. To put a "healthy" twist on them, I used coconut oil instead of butter and they turned out great! So crunchy and sweet, I recommend this easy gluten-free/dairy-free dessert for everyone to enjoy.  PS: I tried to find vegan marshmallows but failed- I know you're out there and hopefully someday our paths will cross.


Ingredients:

- 5 cups rice krispies cereal
- 1/4 cup coconut oil
- 10 oz marshmallows 


In a large pan over medium heat, combine the coconut oil and marshmallows to and continue to stir until marshmallows are melted. It is very important to continue to stir or else the marshmallow will stick to the pan and burn. Once melted, turn off the heat and add the cereal. Spread into a pan lined with either aluminum foil or parchment paper and let cool in room temperature for 1-2 hours. Voila!! Easy and delicious.
