Okay, you have to trust me on this one. I know I know they are not nuggets- BUT THEY ARE SO GOOD. I promise. Especially with honey mustard :)
Ingredients:
- 1 can chickpeas, rinsed and dry
- 1 1/2 cup mashed cooked sweet potato
- 1 cup flax seed meal
- 1/2 cup almond flour
- 1 tbsp coconut flour
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Preheat oven to 375 and line a baking pan with parchment paper. In a food processor/blender, combine the chickpeas and mashed sweet potato. In a bowl, add the mix with the flaxseed meal, almond flour, coconut flour, and spices. Mix everything together well and use your hands to make it into a dough by pressing it together. Form nugget shapes with the dough mixture and place on the pan. Bake for 20-22 minutes flipping them halfway through. Serve with sauce of your choice! Voila!

Bueno… Vas a tener que confiar en mi en ésta. No son exactamente “Nuggets”... pero quedan riquísimos! Especialmente con salsa de mostaza y miel :)
Ingredientes:
1 lata de garbanzos escurridos y secos
1 1/2 taza de puré de batata (boniato)
1 taza de semillas de lino procesadas
1/2 taza de harina de almendras
I cda de harina de coco
1 cdta de sal
1 cdta de paprika
1/2 cdta de pimienta
1/2 cdta de ajo en polvo
Calentá el horno a 375 F (200C)
y forrá una asadera con papel de manteca. En la procesadora combiná los garbanzos y el puré de batata. En un bol mezclá las semillas de lino procesadas, la harina de almendras, la harina de coco, y las especias. Combiná las dos mezclas y usando tus manos formá una masa haciendo presión. Formá bollitos con forma de “Nuggets” y colocalos en la asadera. Horneá por unos 20-22 minutos dándolos vuelta. Servilos con la salsa que más te guste...te recomiendo hacer una a base mostaza y miel. Listo!
