HUGE shoutout to Tabitha Brown for opening my gluten free palate to the world fo sweet potato toast. So easy but more importantly- so good and filling!! Vegan, nut free, and gluten free.


Ingredients:
- 1 large sweet potato
- 1 avocado
- lime
- seasoning of your choice (I used Everything But the Bagel from Trader Joes)
- pumpkin seeds
Begin by boiling your sweet potato on the stove for 5-7 minutes. Drain the sweet potato and let cool for a couple of minutes. Once done cooling, slice the sweet potato lengthwise and toast the pieces in the toaster. I usually toast them twice before topping with mashed avocado, lime juice, seasoning, and pumpkin seeds! Voila!
