Scrap your taco Tuesday plans because you are going to want to make these bad boys. The perfect combination between spice and sweet, these tacos will leave you wanting more (ask my brother, he inhaled 4 of these thickies). OH, and don't let me start on this mango guac. I was weary at first but it was SO GOOD OMG. Who knew? Not me. Definitely making again. For the tortillas, I used Siete Cassava tortillas. Gluten Free, Dairy Free, and Nut Free for all my baddies.
Ingredients
Cajun Fish:
- Tilapia (fresh or frozen)
- Cajun Seasoning
- Avocado Oil
Preheat oven to 425. Brush the fish with avocado oil and then season with Cajun seasoning. Bake for 12-14 minutes.
Mango Guacamole:
- 1 mango, chopped
- 3 avocados, mashed
- Half onion, diced
- 1 lemon
- 1/4 cup chopped cilantro
- 1/2 tsp chili powder
- 1/2 tsp salt
Mix all of the ingredients in a bowl and voila! Add to the fish tacos for some yummy goodness. I had extra to eat with my favorite Siete grain free tortilla chips :)
