LEMON SHRIMP ZOODLES

Nothing like some lemon shrimp zoodles for your perfect date night. These are delicious, low carb, nut free, and gluten free! I bought the zoodles already frozen but you can buy a zuchinni and make the noodles yourself at home! 


Ingredients:

- 1 tablespoon vegan butter

- 1 tablespoon olive oil

- 1 shallot - finely chopped

- 4 cloves garlic - minced (about 1 1/2 tablespoons)

- 1 pound large raw shrimp - peeled and deveined with tails on (fresh or frozen and thawed)

- 1 teaspoon kosher salt

- 1/2 teaspoon red pepper flakes

- 1/4 teaspoon black pepper

- 1/4 cup low-sodium chicken broth (or white wine)

- zest of 1/2 lemon

- 1/4 cup freshly squeezed lemon juice

- 1 1/2 pounds zucchini noodles - from about 4 medium zucchini

First, heat the butter and olive oil in a medium pan over medium heat. Add the sliced shallot and minced garlic and cook for about 3 minutes. Add the shrimp, salt/pepper, red pepper flakes and stir for another 5 minutes. Then add the chicken broth, lemon juice, and lemon zest and bring to a boil. Once the shrimp are cooked through, add the noodles and stir! Voila! I added some parmesan cheese on top and it tasted devine.
