VEGAN TACO BOWLS

I had a ton of leftover foods and whipped up this vegan taco bowl. It was soo good. For the vegan beef, I bought mine at Trader Joe's but you can find at most stores or opt out! 


Ingredients:

- Vegan Beef

- Organic black beans

- Quinoa, cooked 

- Avocado 

- Kale

- Tomato, sliced

- Taco Seasoning

- Sweet Potatoes, cubed 

First, I cut up the sweet potaoe and seasoned with salt, pepper, and paprika. I air fried at 380 for twenty minutes (you can also bake). While they cooked, I sautéed the vegan beef with taco seasoning in one pan and sauteed the kale with olive oil and tomatoes in another. In a huge bowl I mixed the kale, tomatoes, black beans, quinoa, and sweet potatoes. Top with Avocado and voila! So good and I had leftovers the next day.
