Happy Halloweeeeen!!! If you're looking for a fun (yet healthy) dessert to make while you binge watch Harry Potter (where my Hufflepuffs at?!) then this recipe is perfect for you!! Vegan and Gluten Free :)
Ingredients:
VEGAN CARAMEL SAUCE
1 cup dates
¼ cup cashews (roasted or raw)
1 cup almond milk
1.5 tsp vanilla extract
¼ tsp sea salt
BUTTERBEER SMOOTHIE
1/3 cup almond milk
1/3 – 1/2 cup frozen banana (about ½ of large banana)
1 date
1/16 tsp ground cinnamon
2 tbsp vegan caramel sauce
2 ice cubes (water or frozen almond milk)
First, soak the dates and cashews in separate bowls overnight (this is very important in order to be able to blend it smoothly). Then, blend all of the vegan caramel sauce ingredients and refrigerate while you make the smoothie. In a blender, combine all of the ingredients for the smoothie and pour into a cup. Pour the vegan caramel sauce on top and voila!! SO DELIcious!!
