COCONUT SHRIMP

 Neeeeeded this. I air fried them but you can also bake them in an oven!! I enjoyed with a homemade honey mustard sauce (mustard, honey, coconut aminos). Gluten free/dairy free/ nut free!!


Ingredients:

- 15 shrimp

- 1 cup unsweetened shredded coconut

- 2 eggs 

- 1/2 tsp garlic powder

- 1/2 tsp salt 

First, whisk the two eggs. In a separate bowl, mix the coconut and spices. Pat dry the shrimp, dip in the eggs, and then dip in the coconut/spices. Lay in an air fryer and bake at 350 for 12 minutes. Voila!!! SO GOOOOD.
