Vegan Eggplant Parmesan

Vegan Eggplant parm is so good y'all. I was skeptical about using vegan cheese but it turned out great!! Shoutout to my bestie Dani for cooking this up with me and making homemade marinara for the sauce. :) 


Ingredients:

- 4 to 6 eggplants, thinly sliced lengthwise

- olive oil

- salt

- marinara sauce ( we made homemade but you can buy one already prepared)

- vegan cheese 

- basil

Preheat oven to 400. Thinly slice the eggplants and drizzle with salt. Let the eggplant sit for twenty minutes to soak in the salt. Once ready, rub in olive oil and bake for 20 minutes. While they bake, prepare the marinara sauce in a pot over the stove. Once the eggplant is baked, begin to layer the eggplant, marinara, and cheese in a baking dish. Top the last layer with marinara, cheese, and basil and bake for an hour. Voila! SO GOOD.
