VEGAN KETTLE CORN/POP DULCE

Pop goes my heart with this recipe. 3 ingredients and sooo easy and delicious- I highly recommend!! No need to buy processed and high calorie kettle corn once you try this recipe!!

Ingredients:

- 2 tbsp coconut oil
- 1/4 cup popcorn kernels (unpopped)
- 1/4 cup maple syrup
- 1/2 tsp vanilla (optional)
- salt 

First, you are going to want to heat the 1 tbsp of coconut oil on medium heat over the stovetop. Once somewhat hot, add the popcorn kernels and cover. When the popping starts, start to shake the saucepan to make sure the popcorn does not burn. When the popping reduces to 1-2 pops per second, set aside. Heat the maple syrup with coconut oil over medium heat. Once it starts to boil, allow it to continue to boil for 3-4 minutes. Once you take it off the heat, you can add 1 tsp of vanilla (optional). Pour over the popcorn and shake to make sure it is evenly distributed over the popcorn. Lay on a pan and and bake for 30 minutes at 250 to make crunchy. DO not skip this step ( I did the first time and my popcorn was soggy)  Add some salt on top and voila!! SO GOOD!!
