Made this soup with Sammy for our post-Halloween tummies. There is absolutely nothing wrong with eating sweets and enjoying your Halloween (Lord knows I did), but my body definitely felt it. For this reason, I made a detox soup to get back in the groove of clean eating!
Ingredients:
- 1 sweet onion, chopped
- 1 carrot, chopped
- 3 stalks celery, chopped
- 5 cups broccoli, florets and stalks
- 7 cups of water
- 1 tsp dried basil
- 1 tsp sea salt
- 1 cup raw cashews
- 2 cups cooked lentils
- 2 cups baby spinach
In a blender mix the cashews with 1.5 cups of water. In a large cooking pot, mix all of the ingredients with 6 cups of water and the cashew cream. Let cook for about 15 minutes, stirring occasionally. Once heated through, put everything in a blender and mix! Voila! Top with some crackers and enjoy. So good, filling, and great way to restart your digestive system :)
