PUMPKIN OAT COOKIES

 vegan, gluten free & only 5 ingredients!!

Ingredients:

- 1 cup peanut butter

- 1 1/2 cup gf rolled oats

- 1/4 cup pumpkin puree

- 1/2 cup maple syrup 

Glaze (optional):

- 2/3 cup powdered sugar

- 2 tbsp almond milk 

Preheat oven to 350. Mix all of the ingredients In a bowl and line a baking sheet with parchment paper. Coat your hands in coconut oil to avoid the stickiness and form balls with the dough. Flatten with a fork an bake for 15 min. While they bake, mix your powdered sugar and almond-milk and leave in the fridge. One your cookies have cooled, glaze your cookies and voila!!
