PUMPKIN TRUFFLES

 Cinnamon + Sugar + Pumpkin = heaven

Vegan and Gluten Free!!!


Ingredients:

- 1/2 cup pumpkin puree

- 1/4 cup maple syrup

- 4 tbsp almond butter

- 2 tbsp coconut cream (the top part of coconut milk)

- 2 cups almond flour

- 1/4 cup coconut flour

- 1 tsp pumpkin spice

Coating:

- 2 tsp cinnamon

- 1/4 cup coconut sugar

- 1 tsp pumpkin spice


Mix all of your ingredients and with your hands, roll little truffle sized balls. Coat in the sugar mix and then refrigerate for 1 hour. Voila! SO GOOOOOOD. I noticed that the longer they are in the fridge, the better they taste!
