ZUCCHINI CHOCO BREAD

Ingredients:
- 1 1/2 cup almond flour
- 3/4 cup tapioca flour or coconut flour
- 1/2 cup cocoa powder
- 3 eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup almond milk
- 1/3 cup maple syrup/ honey
- 1 1/2 cup shredded zucchini

In a large bowl, combine all of the dry ingredients, and in another bowl combine the wet ingredients except the zucchini. Add the wet ingredients to the dry and mix well. Add the zucchini and combine. Scoop the batter into a loaf pan that is lined with parchment paper. Bake for 40- 45 minutes and voila! I topped the bread with melted dark chocolate but that is optional. So good!! It tasted even better once refrigerated for a couple of hours.
