If you love Mediterranean food like me, then I recommend making this easy med bowl at home!! It is healthy, filling, and very easy to make. I bought the falafel mix at Trader Joe's but you can purchase it at any grocery store. I accompanied the falafels with crunchy quinoa, spinach, my homemade hummus, and roasted chickpeas!
Ingredients:
- Falafel mix
- Spinach
- Quinoa
- Homemade hummus
- Roasted chickpeas
To make the falafels, follow the steps on the box purchased. Usually, all you have to do is add water and then you can either fry or bake them. To try to keep the recipe as healthy as possible, I baked the falafels in coconut oil and they turned out great!! Super easy.
To make the crispy quinoa, after cooking the quinoa set the oven to broil (high) and broil the quinoa until crispy- for about 5-7 minutes. Be sure to watch the quinoa consistently as it burns easily.
For the roasted chickpeas rinse, drain, and dry the chickpeas. Set the oven to 400 F. Toss the chickpeas with salt and olive oil. Roast in the oven for 20-25 minutes. Once ready, toss the chickpeas with spices of your choice! I used paprika, garlic powder, onion powder, olive oil, and salt/pepper.
