AKA boujee pesto. Gluten-free and Vegan!!
Ingredients:
- 1 avocado, peeled and diced
- 1 cup fresh basil leaves
- 1/3 cup pine nuts
- 3 cloves garlic, chopped
- juice of 1 lemon
- 2 tbsp olive oil
- salt and pepper to taste
- water as needed
In a food processor/blender, combine the avocado, pine nuts, and garlic until mixed well. Slowly add the wet ingredients- lemon juice and olive oil. Once completely combined, add the salt and pepper to taste. if you want the texture to be more liquid, add water (I added a little bit of water to mine). Refrigerate and voila!! So yummy (especially with yuca fries)!!!

Pesto De Palta
1 palta pelada y trozada
1 taza de albahaca fresca
1/3 taza de piñones
3 dientes de ajo
Jugo de 1 limón
2 cdas de aceite de oliva
sal y pimienta a gusto
Agua si es necesario
En la multiprocesadora o licuadora combiná la palta, los piñones y el ajo hasta que estén bien triturados. Lentamente incorporá los ingredientes húmedos, el jugo de limón y el aceite de oliva. Una vez combinados, agregá la sal y pimienta a gusto. Si querés una textura más líquida agregale un poquito de agua, hacelo de a chorritos. Ponelo en la heladera y listo!
Tip: Queda espectacular con chips de mandioca. (yuca)!
