Made these the other week for good family friends and they were a hit. For the tortilla I used my personal favorite- Siete Almond Flour Tortillas which you can purchase at most grocery stores - HEB, Kroger, Whole Foods. Measurements depend on how many you are making! Gluten Free and Vegan :)
Ingredients
- Two avocados, mashed and seasoned with tajin
- canned black beans
- gluten free tortillas
- spinach
- onion, chopped
- dairy free cheese
- olive oil
First, sauté the chopped onion with the spinach and olive oil. Once sautéed, set a tortilla on a pan over medium heat and add the dairy free cheese, sautéed mixture, and beans. Before placing the other tortilla on top, spread the mashed avocado on it and then place on top of the layered torilla on the pan. Heat on both sides for about 6 minutes and voila! Enjoy with salsa or even vegan cashew queso :)
